Quick Tip: Always secure the sharpener on a clean surface and ensure stability before sharpening. How to Use: Hold knife with blade 90 degrees to the countertop. Stroke knife edge through appropriate stage with moderate pressure, from heel to point. Repeat until blade is sharpened. Stage 1: Coarse sharpens and redefines the proper blade angle on dull knives. Do not use on serrated blades. Usually 3-4 passes. Stage 2: Fine light honing finishes and polishes knife edges. To maintain an already sharp blade or a serrated blade, start here. Usually 1-2 passes.
